Cucumber Dill Spread

1 large cucumber-peeled and grated( I put the cucumber in the food processor-because I was too lazy to grate)
1 8 oz package cream cheese (I bought a 16oz tub and used that)
1 tablespoon mayonnaise (I used nayonaise-which is soy base)
1 tsp dried chives (I used fresh)
1/4 tsp dill weed (I used fresh)
1/4 tsp season salt (I sprinkled in a no salt seasoning)

I blended the cucumber in the food processor and then added 16 oz of cream cheese. I stirred in the rest of the ingredients and let it sit over night. Before serving, spread on melba toasts and snip up some fresh dill on top.

I eyeballed the recipe, but added ingredient amounts to my taste :) - Carol

News Flash...

Garden Fairies Spotted at the Community Center!!!

An Herbie "Thank You" to our Community Center. Some of our very own Garden Fairies worked on two of the Community Center gardens. Plants, timbers and mulch were purchased and installed. The back patio garden received most of the hard work with a complete facelift, fresh color, mulch top-dressing and even an inviting walkway to join the Waterway sidewalk.

The small garden in front of the Community Center received a good weeding,, new plants for a splash of color and a dressing of mulch. Many grateful comments came from some of the folks using the Center.

Stop by before the next meeting and take a gander and a sniff.

Grab Your Binoculars - Nesting Egrets and Herons are back in The Woodlands . Linda has watched them nest in a group of pines at Lake Wedgewood near Split Rock and Wedgewood. The group has grown this year. The acrobatics between nests can be easily seen, and heard, from the covered picnic table area across the lake. They usually nest through the end of May so hurry up.

April Meeting

A large group of members attended the April meeting where we covered a lot of club business and had a terrific guest speaker! The two hours went by too fast. Elissa shared information about lavender, how it's fragrance and medicinal qualities have been utilized for centuries. Nancy introduced Kevin Price, from the Kroger floral department, who did an outstanding job creating arrangements and sharing his love of gardening. Door prize winners were: Janet was the recipient of Kevin's floral basket arrangement, Anne won the salad burnet and Stephanie won the scented geranium. Delicious refreshments were served at the end of the meeting.

March Meeting

The March meeting was an interactive program where club members brought a favorite gardening tool and gave a brief demonstration or story why the tool was useful in the garden. Among the members sharing their tool stories: Rosa brought her chainsaw, Kiki told about her hand hoe where she acquired abroad, Lois brought a very useful gardening bench / kneeling pad for saving ones knees and back while doing garden work, and Carol shared her delightful poem about her "Tool".
Also, March is membership renewal time. Annual membership is $25.00.

My Tool - Poem by Carol Barry

I have this little gizmo
I know it's awfully cool

I'm not sure what it's really called
So, I think I'll call it "TOOL"

I love the way it scrapes the ground
And makes the soil look new

Thus, I think I'll carry it all around
Because, having it is therapy, too

It pulls the weeds and as I work
It makes my labor lighter

Because if there are big tough weeds
My "TOOL" is my little fighter

I love the way it eases my labor
As I get near into the soil

I adore this "TOOL" ever so much
Because it lightens my toil

So, you see, as I said before
I think I'll carry this "baby"

And if you ask to borrow my "TOOL"
I might...just might...say maybe.

(OK. I think the tool is one of those 3 prong trowels?)
